    • 🍠 90g sweet potato, diced
    • 🥒 1/2 cucumber, sliced

  • Dressing

    • 🥛 3 tbsp unsweetened yogurt
    • 1 tbsp mayonnaise
    • đź§‚ A pinch of salt and pepper

Dice the sweet potato into 2cm cubes and soak in water briefly. Drain the water. Slice the cucumber thinly.

In a bowl, rub the cucumber with a pinch of salt and let it sit for 5 minutes. Squeeze out the excess water.

Place the sweet potato in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 5 minutes. Let it cool.

Add the dressing ingredients (yogurt, mayonnaise, salt, and pepper) to the sweet potato and mash slightly while mixing. Add the cucumber and mix well.
