Sweet Potato and Chicken Miso Soup

    • 🍠 150g sweet potato, sliced
    • 🌱 1 piece ginger, julienned
    • đź§… 1/2 stalk green onion, sliced

    • 🍗 150g skinless chicken thigh, diced
  • Seasoning

    • 1/2 tsp dashi powder
    • 2 tbsp miso
  • Liquid

    • đź’§ 400ml water

STEPS

Julienne the ginger and slice the green onion into 1cm rounds.

Cut the sweet potato into half lengthwise, then slice into 5mm pieces. Soak in water for 5 minutes and drain.

Dice the chicken thigh into bite-sized pieces.

Heat water and dashi powder in a pot until boiling, then add chicken and simmer on low heat for 5 minutes. Skim off any foam.

Add sweet potato and ginger to the pot and simmer on medium-low heat for 3 minutes until the sweet potato softens.

Turn off the heat, dissolve miso into the soup, then reheat and add green onion. Simmer for 2 minutes.
