- 🥚 2 soft-boiled eggs
Seasoning
- 3 tbsp mirin
- 2 tbsp soy sauce

STEPS
Cut the chicken thigh into bite-sized pieces.
Add all seasoning ingredients (mirin, soy sauce, water) to a pot and heat over medium heat until boiling.
Add the chicken pieces to the pot and bring back to a boil. Skim off any foam or impurities.
Cover the pot and simmer on low heat for 7–8 minutes.
Add the soft-boiled eggs and simmer for an additional 2 minutes.
