  • Fish

    • 🐟 200g fresh salmon fillets
  • Vegetables

    • 🥦 1/2 head broccoli
    • 1 pack maitake mushrooms
  • Seasonings

    • 2 tbsp mirin
    • 2 tbsp sake
    • 🍬 1/2 tbsp sugar
    • 💧 2 tbsp water
    • 🧂 1 tbsp soy sauce

Remove the skin and bones from the salmon and cut into thirds. Separate the maitake mushrooms into small clusters.

Cut the broccoli into small florets. Place in a microwave-safe container, add 1 tbsp water, cover loosely with plastic wrap, and microwave at 600W for 2 minutes. Drain excess water.

In a frying pan, combine mirin, sake, sugar, and water. Heat over medium heat until boiling. Add soy sauce and bring to a boil again.

Add the salmon and maitake mushrooms to the pan. Cover with a lid and simmer over medium heat for about 3 minutes.

Flip the salmon pieces, add the broccoli, and simmer for another 2 minutes until the flavors meld together.
