Stuffed Shiitake Mushrooms with Tomato Sauce

    • 120g ground meat
  • Vegetables

    • 6 shiitake mushrooms
    • đź§… 1/4 onion, minced
  • Dairy

    • đź§€ 30g shredded cheese
  • Seasoning

    • 1/2 tbsp cornstarch
    • Pinch of dried parsley
    • đź§‚ 1/3 tsp salt
    • Pinch of pepper
    • 1/2 tsp sugar
    • 1 tbsp olive oil
  • Sauce

    • 🍅 200g canned diced tomatoes
    • đź’§ 50ml water

STEPS

Cut off the stems of the shiitake mushrooms and mince the stems. Mince the onion.

In a plastic bag, mix ground meat, minced onion, minced shiitake stems, and seasonings until sticky.

Dust the inside of the shiitake caps with cornstarch. Pipe the meat mixture into the caps using a cut corner of the bag.

Heat olive oil in a pan over medium heat. Place the stuffed mushrooms meat-side down and cook for 2 minutes until browned. Flip and add the tomato sauce ingredients.

Cover and simmer on low heat for 7–8 minutes until the meat is cooked through. Add cheese and simmer for another 3–4 minutes until melted.

Plate the stuffed mushrooms and garnish with dried parsley.
