    • 🐟 200g salmon fillet
    • 200g bean sprouts
    • 70g komatsuna (Japanese mustard spinach)
  • Seasonings

    • 1 tbsp sake
    • 🧂 Pinch of salt and pepper
    • 1 tbsp salad oil
  • Sauce

    • 1 tbsp mirin
    • 1 tbsp soy sauce
    • 1 tsp yuzu pepper

Cut the salmon into 3–4 pieces and season with sake, salt, and pepper.

Trim the ends of the komatsuna and cut into 3cm pieces.

Mix the sauce ingredients (mirin, soy sauce, yuzu pepper) in a bowl.

Heat salad oil in a frying pan and cook the salmon on both sides over medium heat until browned. Remove from the pan.

In the same pan, stir-fry the bean sprouts and komatsuna over medium heat until softened. Return the salmon to the pan and add the sauce. Stir quickly to combine.
