Stir-fried Eggplant and Canned Mackerel

    • 1 can of mackerel in water (190g)
  • Seasoning

Cut off the stem of the eggplants, slice them in half lengthwise, and then cut into thin diagonal slices.

Heat salad oil in a frying pan over medium heat. Add the canned mackerel and stir-fry briefly while breaking it apart.

Add the eggplant and stir-fry over medium-low heat for 2–3 minutes until softened. Season with salt and pepper, and mix well.
