Remove the stems and seeds from the red and yellow bell peppers, then slice them into 7mm strips. Thinly slice the onion into 7mm slices.

Cut the bacon into 7mm wide strips.

Heat olive oil in a frying pan over medium heat. Add the bacon and stir-fry briefly. Add the red and yellow bell peppers, onion, and grated garlic. Stir-fry until the vegetables become tender.

Add soy sauce and quickly stir to combine. Remove from heat.
