STEPS
Rinse the prawns under water to remove sawdust. Place them in ice water for 5 minutes, covering with a sieve to prevent jumping.
Use a toothpick to remove the vein from the prawns by inserting it between the shell segments.
Place the prawns, sake, and salt in a frying pan. Heat over medium heat until boiling, then cover and steam on low heat for 5 minutes until the prawns change color.
Turn off the heat and let the prawns cool with the lid on.
