INGREDIENTS
Vegetables
- 🎃 2 squashes (diced)
- 🧅 1 onion (minced)
- 🥕 1 carrot (diced)
Liquids
- 🥣 4 cups of vegetable broth
- 🥥 1 cup of coconut milk
Seasonings
- 🧂 A pinch of salt
- A pinch of pepper
STEPS
Heat a large pot over medium heat, add olive oil and onions, and sauté until translucent.
Add carrots and squash to the pot and sauté for another 5 minutes.
Pour in the vegetable broth and simmer for about 20 minutes, until the squash is tender.
Transfer the soup from the pot to a blender and puree until smooth.
Return the puree to the pot, stir in the coconut milk, and season with salt and pepper to taste.
