INGREDIENTS
Main Ingredients
- 🥚 1 egg
- 🥓 2 slices bacon
- 🥬 100g spinach
- 🌽 20g frozen corn
Seasoning
- 1/2 tbsp olive oil
- đź§‚ 1/4 tsp salt
- Pinch of black pepper
STEPS
Wash spinach thoroughly, trim roots, and cut into 4cm pieces. Microwave with 1 tbsp water for 1 minute at 600W, then rinse, cool, and squeeze out excess water.
Cut bacon into 1cm wide strips.
Heat olive oil in a pan over medium heat. Add bacon and cook until lightly browned. Add spinach, corn, and salt, and stir-fry for 1 minute.
Push the mixture to the edges of the pan to create a nest. Crack an egg into the center, cover, and cook on low heat for 3 minutes until the egg is semi-cooked.
Serve on a plate and sprinkle with black pepper.
