- 🥬 1 handful spinach
- đź§… 1/2 onion, chopped
- 🍠1 sweet potato, sliced
- 🍅 1/2 tomato, diced
- đź§‚ 1/2 tsp salt
- đź§„ 1 tbsp minced garlic
STEPS
Trim spinach roots and cut long leaves. Chop onion coarsely, slice sweet potato thinly, and dice tomato into bite-sized pieces.
Heat oil in a pan, add minced garlic and onion, and sauté. Add sweet potato slices and cook until slightly softened. Season with salt.
Once sweet potato is partially cooked, add spinach and stir briefly until wilted.
Beat 3 eggs and pour them into the pan over the vegetables.
Reduce heat to low, place diced tomato on top, cover the pan with a lid, and cook gently until eggs are set.
Serve the spinach frittata hot and enjoy!
