    • 🥚 3 eggs
    • 2-3 tbsp cooking oil
    • đź§… 1 handful chopped green onion
    • đź§‚ 3 pinches salt

STEPS

Wash the spinach thoroughly and cut it into bite-sized pieces.

Crack 3 eggs into a bowl, add 1 pinch of salt, and whisk well.

Heat a pan over low heat, add a little oil, and pour in the egg mixture. Stir gently with chopsticks to make scrambled eggs.

Remove the scrambled eggs from the pan and set aside.

In the same pan, add 2 tbsp of oil and the chopped green onion. Cook over low heat to make scallion oil.

Turn the heat to high and add the spinach to the pan.

Once the spinach starts to wilt, add 2 pinches of salt and mix well.

Return the scrambled eggs to the pan and mix everything together. Adjust seasoning with salt or oyster sauce if desired.
