Spinach and Egg Stir-fried Tofu

INGREDIENTS

    • 🥬 120g spinach
  • Protein

    • 🍲 350g firm tofu
    • 🥚 2 beaten eggs
  • Oils

    • 1 tbsp salad oil
    • 1 tsp sesame oil
  • Seasonings

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1/2 tsp sugar
    • 1 tbsp soy sauce
    • 1/2 tsp dashi powder

Wrap the firm tofu in kitchen paper, place it on a microwave-safe plate, and heat it in a 600W microwave for 3 minutes.

Boil plenty of water in a frying pan, add the spinach, and cook for about 2 minutes. Drain the water, cut off the roots, and slice into 2cm widths.

Heat salad oil in a frying pan, crumble the tofu with a spoon, and stir-fry over medium heat until the moisture evaporates.

Add the seasonings and spinach, and stir-fry until the liquid is absorbed.

Add the beaten eggs and stir-fry. Drizzle sesame oil over the mixture and combine well.
