    • 1 tbsp mirin

  • Thickener

    • 1 tbsp potato starch

Tear the king oyster mushrooms into bite-sized pieces and cut the potatoes into chunks.

Heat sesame oil in a pot over medium heat, add ground pork, and stir-fry until crumbly. Add doubanjiang and grated ginger, then stir-fry until fragrant.

Add the mushrooms and potatoes, and stir-fry until the edges of the potatoes become translucent.

Add the seasoning mix (sake, mirin, sugar, water), cover with a lid, and simmer on low heat for 10 minutes.

Add soy sauce, mix well, then stir in the potato starch slurry to thicken. Garnish with chopped green onions before serving.
