    • 2/3 cup cornstarch
    • 🥚 1 egg white
    • 💧 Adequate amount of water
    • Adequate frying oil

    • Pinch of pepper
    • 1 tbsp cooking wine
  • Sauce Ingredients

    • 🧅 3 tbsp chopped onion
    • 2 tbsp chopped green onion
    • 2 green chilies
    • 1 red chili
    • 🧄 1 tbsp minced garlic
    • 1 tbsp soy sauce
    • 2 tbsp oyster sauce
    • 2 tbsp cooking wine
    • 2 tbsp vinegar
    • 🍬 3 tbsp sugar
    • Pinch of pepper
    • 2 tbsp cooking oil

Peel and devein the shrimp, season with salt, pepper, and 1 tbsp cooking wine. Mix well and set aside. Chop onion, green chili, red chili, green onion, and garlic finely. Prepare the sauce by mixing soy sauce, oyster sauce, cooking wine, vinegar, sugar, and pepper.

Coat the seasoned shrimp with 2/3 cup cornstarch, 1 egg white, and adequate water to form a batter. Fry the shrimp twice: first at medium heat, then at high heat for crispiness.

Heat 2 tbsp oil in a pan, sauté chopped onion, green onion, chilies, and garlic until fragrant.

Pour the prepared sauce into the pan, bring to a boil, then add the fried shrimp. Toss quickly over high heat and serve.
