Spicy Eggplant and Sausage Soup

  • Main

    • 1 sausage (20g)
    • 1/2 eggplant (40g)
    • 🍅 2 cherry tomatoes
    • 1/2 tbsp olive oil
    • 1/2 tsp curry powder
    • Pinch of black pepper
    • đź§€ Grated cheese to taste
  • Soup Base

    • 🥛 150ml milk
    • Pinch of consomme
    • đź§‚ Two pinches of salt

STEPS

Cut the eggplant into 5mm slices and halve the cherry tomatoes.

Slice the sausage diagonally into 1cm pieces.

In a mug, combine sausage, eggplant, cherry tomatoes, olive oil, and curry powder. Cover loosely with plastic wrap and microwave at 600W for 2 minutes.

Add the soup base ingredients (milk, consomme, salt) and mix well. Microwave uncovered for 1 minute to heat through.

Sprinkle black pepper and grated cheese on top before serving.
