INGREDIENTS
Soy Sauce
- đź§‚ 1 tbsp sugar
- đź§‚ 3 tbsp soy sauce
- 3 tbsp mirin
- 1 tbsp oyster sauce
- đź§„ 1 tbsp minced garlic
- A pinch of pepper
Pasta
- 100g spaghetti
- 4 tbsp soy sauce mixture
- đź’§ 4 tbsp pasta water or water
- đź§„ 4 cloves garlic
- 1 green chili pepper
- 🍄 1 shiitake mushroom
- 3 red chili peppers
- 2 tbsp cooking oil
- A dash of sesame oil
- A handful of baby greens
STEPS
Mix all soy sauce ingredients together to make the sauce.
Slice garlic, green chili pepper, and shiitake mushroom.
Boil 1L of water with 10g of salt and cook 100g of spaghetti for 1 minute less than al dente.
Heat cooking oil in a pan over medium-low heat and sauté garlic until golden brown.
Add sliced green chili, shiitake mushroom, and red chili peppers. Stir-fry briefly.
Add 4 tbsp of pasta water and 4 tbsp of soy sauce mixture to the pan. Simmer on low heat.
Add the cooked spaghetti and beef brisket to the pan. Stir-fry until the sauce is absorbed and the beef is tender.
Toss the pasta in the pan to emulsify the sauce with the pasta water and oil.
Drizzle sesame oil for aroma and garnish with baby greens before serving.
