    • 350g soft tofu
    • 🥚 2 eggs
    • 1/2 stalk green onion
    • đź§… 1/2 onion
    • đź’§ 1L water
  • Seasonings

    • 1 tbsp soy sauce
    • 1 tbsp anchovy sauce
    • đź§„ 1 tbsp minced garlic
    • đź§‚ A pinch of salt

Slice the green onion thinly and julienne the onion.

Beat the eggs gently until smooth.

In a pot, bring 1L water, 1 tbsp soy sauce, and 1 tbsp anchovy sauce to a boil over high heat.

Reduce to medium heat and add 1 tbsp minced garlic and the julienned onion.

Once boiling again, pour the beaten eggs gently around the pot.

Cut the soft tofu in half and add it whole to the pot, then break it into large chunks with a spoon.

Adjust seasoning with a pinch of salt to taste.

Add the sliced green onion and simmer briefly.

Turn off the heat and optionally add sesame oil and pepper for enhanced flavor.
