    • 4 bunches perilla leaves

    • 1 tbsp chopped green onion

    • 1 tbsp soy sauce
    • 1/2 tbsp sesame oil

STEPS

Remove the stems from the perilla leaves and tear them into thirds by hand. Thinly slice the onion.

Boil water and add a pinch of salt. Blanch the perilla leaves briefly, counting to ten.

Rinse the blanched leaves in cold water and squeeze out excess water, leaving about 10% moisture.

In a pan, combine perilla leaves, soy sauce, sesame oil, and a bit of cooking oil. Mix well by hand.

Turn on the heat and stir-fry the onion until softened.

Taste and adjust seasoning with additional soy sauce if needed. Add chopped green onion and stir briefly. Finish with a few drops of sesame oil.
