    • 3 tbsp miso
    • đź’§ 800 ml water

Cut the thin skin between the lobster's head and body using a knife. Twist and pull gently to separate the head and body.

Flip the body over and use kitchen scissors to cut around the edge of the belly shell. Slowly peel off the shell and remove the meat using a spoon.

Wash the lobster meat briefly in ice water, pat dry, and cut into bite-sized pieces.

Arrange the lobster head upright on a plate using toothpicks. Place the peeled shell with the inner side facing up, and lay shredded daikon and shiso leaf on top. Serve the lobster meat on the shiso leaf.

For lobster miso soup, cut the lobster head in half using kitchen scissors. Heat water and lobster head in a pot over medium heat. Skim off foam, cover, and simmer for 10 minutes. Add miso, stir, and garnish with chopped green onion before serving.
