INGREDIENTS
Main Ingredients
- 🥒 5 cucumbers
- đź§‚ 2 tbsp coarse salt
Seasoning
- 4 tbsp anchovy sauce
- 4 tbsp red pepper powder
- đź§„ 1 tbsp minced garlic
- 🍬 2 tbsp sugar
- ✨ 2 tbsp sesame seeds
STEPS
Wash 5 cucumbers thoroughly and cut them into bite-sized cubes.
Sprinkle 2 tbsp of coarse salt evenly over the cucumber pieces and mix well. Let them sit for 20 minutes, stirring once halfway through.
Taste a piece of cucumber. If too salty, rinse them once and drain the water. If not overly salty, simply drain the water using a sieve.
Combine anchovy sauce, red pepper powder, minced garlic, sesame seeds, and sugar in a bowl to create the seasoning mix.
Mix the drained cucumber pieces with the seasoning mix until evenly coated.
Serve the cucumber kimchi immediately or store it in the fridge for later consumption.
