INGREDIENTS
Oil and Seasoning
- 3 ½ gallons peanut oil for frying
- đź§‚ 1 tablespoon salt, or to taste
- 1 tablespoon ground black pepper, or to taste
Main Ingredient
- 1 (10 pound) whole turkey, neck and giblets removed
STEPS
Heat oil in a large stockpot or turkey fryer to 350°F (175°C). Ensure fryer is safely located outdoors far from buildings or wooden decks.
Ensure turkey is fully thawed. Trim excess skin from the neck area, ensuring an opening of at least 1 inch in diameter.
Pat turkey dry with paper towels. Rub salt and pepper liberally both inside and outside the bird.
Place turkey into a drain basket, neck-side first. Slowly and carefully lower it into the hot oil.
Maintain oil temperature at 350°F (175°C) and cook for 3 ½ minutes per pound; approximately 35 minutes for a 10-pound turkey.
Carefully remove turkey from the oil and drain. Check internal temperature at the thickest part of the thigh for 180°F (80°C). Rest for 15 minutes before slicing.
