INGREDIENTS
Vegetables
- 10 cm radish
- đź§… 1/2 stalk green onion
Seasoning
- 5 tbsp red pepper powder
- 🍬 2.5 tbsp sugar
- 2.5 tbsp corn syrup
- 1 tbsp fish sauce
- đź§„ 1 tbsp minced garlic
- đź§‚ 1/4 tbsp salt
Brining
- đź§‚ 1.5 tbsp sea salt
- 🍬 1 tbsp sugar
STEPS
Slice the radish into large strips and mix with 1.5 tbsp sea salt and 1 tbsp sugar. Let it brine for 1 hour.
Chop 1/2 stalk of green onion finely. If using scallions, cut them into lengths matching the radish strips.
After 1 hour, rinse the brined radish 2-3 times and squeeze out excess water.
In a bowl, combine 5 tbsp red pepper powder, 2.5 tbsp sugar, 2.5 tbsp corn syrup, 1 tbsp minced garlic, 1 tbsp fish sauce, 1/4 tbsp salt, and the chopped green onion.
Mix the radish with the seasoning mixture thoroughly until evenly coated.
Serve the bossam kimchi with meat dishes like pork belly or boiled pork.
