INGREDIENTS

- 🍜 1 serving udon noodles
- 1 piece mentaiko
- 🧅 1 stalk scallion
- 🧈 1 slice butter
- 🥚 1 egg
- A pinch of seaweed flakes
- 1 tbsp tsuyu
STEPS
Cut the mentaiko in half and scrape out the roe using the back of a knife.
Slice the scallion thinly.
Separate the egg yolk from the egg white.
Boil the udon noodles in a pot of water until cooked, stirring occasionally.
Place the cooked udon noodles in a bowl and top with mentaiko and scallions.
Add butter and seaweed flakes on top.
Drizzle tsuyu over the dish and mix well before serving.
