INGREDIENTS

- 1 whole squid
Vegetables
- 400g daikon radish
Seasonings
- 150ml water
- 1/2 tsp dashi powder
- 100ml sake
- 🍬 2 tbsp sugar
- 2 tbsp soy sauce
STEPS
Cut the daikon radish into 2cm thick slices, peel them, and quarter each slice. Boil the daikon in a pot of water for 5–6 minutes, then drain.
Prepare the squid by removing the innards and cartilage. Slice the body into 5mm thick pieces, trim the suction cups, and cut the tentacles into bite-sized lengths.
Add the seasoning ingredients (water, dashi powder, sake, sugar, soy sauce) to a pot and bring to a boil. Add the squid and cook until it is just done, then remove the squid.
Add the daikon to the same pot, cover with a drop lid, and simmer on low heat for 20 minutes.
Return the squid to the pot, cover with the drop lid again, and simmer for another 5 minutes.
