INGREDIENTS

  • Fish

    • 🐟 4 sardines
  • Vegetables

    • 🧅 1/2 onion, sliced
    • 🧄 1 clove garlic, minced
  • Seasoning

    • Flour, as needed
    • 🧂 Salt and pepper, to taste
  • Oil

    • 2 tbsp olive oil
  • Tomato Sauce

    • 🍅 1 can diced tomatoes
    • 💧 100 ml water
    • 1 pinch dried basil
    • 1 tsp consomme

STEPS

Season sardines with salt and pepper, pat dry, and coat with flour. Slice the onion and mince the garlic.

Heat 1 tbsp olive oil in a pan over medium heat. Fry sardines until golden on both sides, then remove from the pan.

Wipe the pan clean, add the remaining olive oil and garlic, and heat over low heat until fragrant. Add the onion and sauté over medium heat until translucent.

Add diced tomatoes, water, dried basil, and consomme to the pan. Simmer to create the sauce. Once thickened, return sardines to the pan, spoon sauce over them, cover, and simmer for 3–4 minutes.
