- 🦐 50g fresh sakura shrimp
Vegetables
- 300g winter melon, peeled and cubed
Seasonings
- 💧 200cc water
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1/3 tsp dashi powder
- 2 slices ginger
STEPS
Remove seeds and pulp from the winter melon, peel, and cut into 4–5cm cubes.
In a pot, combine water, mirin, soy sauce, dashi powder, ginger slices, winter melon, and sakura shrimp. Heat over medium heat until boiling.
Reduce to low heat, cover with a drop lid, and simmer for 10 minutes until the winter melon is tender.
