Seasoning

- 1/2 tsp potato starch
STEPS
Clean the Pacific saury by removing the head, tail, and internal organs. Cut into thirds, rinse with water, and pat dry.
In a plastic bag, mix the seasoning ingredients (ginger, soy sauce, sugar, and potato starch) until the starch dissolves. Add the fish, remove air from the bag, and seal tightly.
Bring water to a boil in a pot and maintain a gentle simmer. Submerge the sealed bag and cook for 15 minutes.
