INGREDIENTS
Fish
- 1 can (190g) mackerel in water
Vegetables
- 🥔 2 potatoes (200g), diced
- đź§… 1/2 onion, sliced
Oil & Seasoning
- 1 tbsp olive oil
- đź§„ 1/3 tsp grated garlic
- Chopped parsley, as needed
Tomato Sauce
- 1/2 tsp consomme
- đź’§ 100 ml water
- 🍅 1/2 can (200g) whole tomatoes
- đź§‚ 1/3 tsp sugar
- đź§‚ 1/3 tsp salt
- Pinch of pepper
STEPS
Slice the onion and dice the potatoes. Soak the potatoes in water and drain.
Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until translucent. Add potatoes and stir until coated with oil.
Add consomme and water, bring to a boil over medium heat. Cover and simmer on low heat for 7 minutes.
Add remaining tomato sauce ingredients. Crush the tomatoes while stirring. Bring to a boil over medium heat, cover, and simmer on low heat for 5 minutes.
Add the mackerel, gently mix without breaking the fish. Heat over medium until warmed through. Serve and garnish with parsley.
