Simmered Komatsuna and Deep-Fried Tofu

    • Deep-fried tofu 1 piece
    • Dashi stock 200ml
    • Soy sauce 1 tablespoon
    • Mirin 1 tablespoon

Wash the komatsuna and chop into 5cm-wide pieces.

Pour boiling water over the deep-fried tofu to remove excess oil, then cut into thin slices.

In a pot, combine dashi stock, soy sauce, and mirin, then bring to a boil.

Add the komatsuna stems and deep-fried tofu, and simmer for about 2 minutes.

Add the leafy parts and simmer for another 1–2 minutes, then turn off the heat to allow the flavors to meld.
