INGREDIENTS
Slaw Dressing
- 1/2 cup mayonnaise
- 1/3 cup lime juice
- 1 tablespoon honey
- 1 tablespoon avocado oil
- 1 teaspoon ground cumin

Slaw
- 1 (8 ounce) package shredded cabbage
Shrimp Preparation
- 1 cup water
- 1 teaspoon bouillon
- 1/4 teaspoon cayenne pepper
Base Spread
- 1 (15 ounce) can black beans
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic granules
Toppings
- 8 (6-inch) tostada shells
- 4 ounces queso fresco, crumbled
- 1 bunch cilantro, chopped
- 1/2 cup crema
STEPS
Combine mayonnaise, minced chipotle peppers, lime juice, honey, avocado oil, ground cumin, and salt in a large bowl. Mix well to make the slaw dressing. Toss shredded cabbage with the dressing and refrigerate.
In a skillet, bring water, bouillon base, and cayenne pepper to a boil. Add shrimp and cook until pink and curled, 3-5 minutes. Remove cooked shrimp immediately.
Preheat the broiler with the oven rack about 6 inches from the heat. Line a baking tray with aluminum foil.
Mix refried beans, smoked paprika, ground cumin, and garlic granules in a bowl. Spread the mixture onto tostada shells, then sprinkle queso fresco evenly.
Broil tostadas until cheese just begins to melt, approximately 1-2 minutes. Watch carefully to avoid burning.
Top each tostada with slaw, cilantro, shrimp, and drizzle with crema. Serve immediately with lime slices if desired.
