    • 12 sheets wonton wrappers
  • Seafood

    • 🍤 5 peeled shrimp (60g)
  • Vegetables

    • 80g grated lotus root
    • đź§… 10cm minced green onion
    • 🍄 2 sliced shiitake mushrooms
    • 🥬 2 torn lettuce leaves
  • Oil

    • 1/2 tbsp sesame oil
  • Seasonings

    • 1/2 tsp grated ginger
    • 1 tsp sake
    • đź§‚ 1 pinch salt
    • 1 tbsp cornstarch
    • 1 tsp sesame oil
  • Soup Base

    • đź’§ 600cc water
    • 1 tbsp sake
    • 1 tbsp soy sauce
    • đź§‚ 1 pinch salt
    • 1/2 tsp chicken stock powder

Chop the peeled shrimp into small pieces.

Grate the lotus root and lightly squeeze out excess water. Slice the shiitake mushrooms and mince the green onion.

Mix shrimp, lotus root, green onion, and the seasonings (ginger, sake, salt, cornstarch, sesame oil) in a bowl to create the filling.

Place 1/12 of the filling onto each wonton wrapper. Wet the edges with water and fold to seal. Repeat for all 12 wrappers.

Bring the soup base (water, sake, soy sauce, salt, chicken stock) to a boil over medium heat. Add the wontons and shiitake mushrooms, cooking for 2-3 minutes. Add torn lettuce leaves and cook for an additional 30 seconds. Drizzle sesame oil before serving.
