INGREDIENTS
Main Ingredients
- 🍤 8 peeled shrimp (120g)
- 🍆 2 eggplants
- Salad oil, as needed
- 2 tbsp tempura flour
Fritter Batter
- 🥚 1 egg
- 🥛 2 tbsp milk
- 40g all-purpose flour
- 1/2 tsp baking powder
- đź§‚ 1/3 tsp salt
Chili Sauce
- 🍬 1/2 tsp sugar
- 1 tbsp vinegar
- 1 tsp chili bean paste
- 🍅 2 tbsp ketchup
STEPS
Coat peeled shrimp with 1 tbsp tempura flour.
Cut off the eggplant stems, peel in stripes using a peeler, and slice into 7mm thick rounds. Coat with 1 tbsp tempura flour.
Mix all ingredients for the fritter batter in a bowl.
Heat 3cm of salad oil in a pot to 180°C. Dip eggplant slices into the batter and fry for 1 minute, flipping occasionally. Remove and repeat with shrimp, frying for 2 minutes until cooked through.
Mix all chili sauce ingredients in a bowl.
Plate the fritters and serve with chili sauce on the side.
