- 🍤 150g peeled shrimp
- 🥚 2 eggs, beaten
- đź§… 55g green onion
- 100g komatsuna
- 1/2 tsp grated ginger
- 1/2 tsp grated garlic
- 1/2 tsp doubanjiang
- 1 tbsp salad oil
Shrimp Seasoning
- 1/2 tbsp sake
- đź§‚ Pinch of salt
- 1/2 tsp potato starch
Combined Seasoning
- 1 tbsp sake
- 🍬 1 tsp sugar
- đź§‚ 1/3 tsp salt
- 1/3 tsp chicken broth powder
- 🍅 2 tbsp ketchup
- đź’§ 100cc water
- 1/2 tbsp potato starch
Pea Shoots and Wakame Sesame Mayo Salad
- 125g pea shoots
- 2 tbsp dried wakame
- 1 tbsp mayonnaise
- 1 tsp vinegar
- 1/2 tbsp soy sauce
- 2 tbsp ground white sesame
STEPS
Prepare shrimp by seasoning with sake, salt, and potato starch.
Mix combined seasoning ingredients in a bowl and set aside.
Heat salad oil in a pan and sauté ginger, garlic, and doubanjiang until fragrant.
Add shrimp to the pan and stir-fry until just cooked.
Pour beaten eggs into the pan and gently stir until fluffy.
Add green onion, komatsuna, and combined seasoning to the pan. Stir-fry until vegetables are tender.
For the salad, soak dried wakame in water until rehydrated.
Mix pea shoots, wakame, mayonnaise, vinegar, soy sauce, and ground sesame in a bowl.
