    • 🍚 2 bowls cooked rice (300g)
  • Seafood

    • 🍤 6 shrimp (90g), peeled and deveined
  • Egg

    • 🥚 1 egg
  • Vegetables

    • đź§… 1/2 onion, thinly sliced (100g)
    • 1/4 red paprika, diced (35g)
  • Cheese

    • đź§€ 40g shredded pizza cheese
  • Curry Seasoning

    • 🍅 200g canned diced tomatoes
    • đź’§ 70cc water
    • 40g curry roux, finely chopped

STEPS

Thinly slice the onion and dice the red paprika into 1cm cubes. Finely chop the curry roux.

Peel and devein the shrimp, removing the tails. Wash and pat dry with paper towels.

In a microwave-safe container, mix the onion and curry seasoning ingredients. Cover loosely with plastic wrap and microwave at 600W for 5 minutes. Stir well, then add shrimp and red paprika. Cover again and microwave for 3 minutes until the shrimp are cooked.

In another microwave-safe container, layer the rice, curry mixture, and shredded cheese. Create a small indentation in the center and crack the egg into it. Bake in a toaster oven for 5–7 minutes until the egg is soft-boiled.
