    • 80g pea shoots
  • Dressing

    • 1 tbsp salted kombu

Remove the tails from the shrimp.

Cut the avocado in half, remove the pit and peel, then dice into 1cm cubes. Trim the roots off the pea shoots and cut them into quarters.

In a bowl, mix the dressing ingredients (salt, pepper, vinegar, olive oil, and salted kombu). Add the shrimp and avocado, mix gently, then add the pea shoots and toss lightly.
