    • 🍜 1 frozen udon noodle pack
    • 🍄 3 shiitake mushrooms, sliced
    • đź§… 2 green onions, thinly sliced
    • đź’§ 250ml water
    • 1.5 tbsp concentrated mentsuyu
    • 1/3 tsp grated ginger
  • Thickener

    • 1 tbsp potato starch
    • đź’§ 1 tbsp water

STEPS

Slice the shiitake mushrooms thinly after removing the stems. Thinly slice the green onions diagonally.

In a small pot, combine water, mentsuyu, grated ginger, and shiitake mushrooms. Heat over medium heat until it starts to boil. Cover and simmer on low heat for 5 minutes.

Uncover the pot and turn the heat to medium-low. Gradually add the potato starch mixture (1 tbsp starch mixed with 1 tbsp water) while stirring. Cook for another 30 seconds until thickened.

Microwave the frozen udon noodles according to the package instructions. Place the cooked noodles in a serving bowl.

Pour the thickened shiitake sauce over the noodles and garnish with sliced green onions.
