Trim the stems of the shiitake mushrooms and separate the caps and stems. Slice the caps thinly and tear the stems into bite-sized pieces. Cut the pea shoots into thirds.

Place the pea shoots and shiitake mushrooms in a microwave-safe container in layers. Cover loosely with plastic wrap and microwave at 600W for 2 minutes. Let cool and drain excess water.

Mix the ponzu sauce, ground white sesame, and sesame oil in a bowl. Add the pea shoots and shiitake mushrooms, then toss to combine.
