INGREDIENTS
Vegetables
- 1 tbsp olive oil

- 1 medium bell pepper, diced
- 🍅 4 medium tomatoes, chopped

- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp chili powder

STEPS
Heat olive oil in a large skillet over medium heat.
Sauté diced onions until softened, about 3-4 minutes.
Add minced garlic and diced bell pepper, cooking for another 3-4 minutes.
Stir in chopped tomatoes, paprika, cumin, chili powder, and salt.
Simmer the mixture until it thickens, about 10 minutes.
Make small wells in the sauce and crack an egg into each well.
Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
