  • Fish

    • 🐟 150g bonito
  • Vegetables

    • 2 myoga
    • 5 shiso leaves
    • 1 piece ginger
    • 100g yam
  • Seasoning

    • 🧂 Pinch of salt and pepper
    • 1 tbsp salad oil
    • 2 tbsp vinegar
    • 🧂 2 tbsp soy sauce

STEPS

Thinly slice myoga, shiso leaves, and ginger. Peel the yam, place it in a bag, and lightly pound it.

In a bowl, mix the sliced vegetables, vinegar, and soy sauce.

Season the bonito with salt and pepper.

Heat salad oil in a pan over medium-high heat. Sear the bonito for about 20 seconds on each side until browned. Remove and cool in ice water. Slice into 2cm pieces.

Arrange the bonito on a plate, top with the vegetable mixture, and drizzle with the sauce.
