INGREDIENTS

  • Rice

    • 🍚 2 bowls cooked rice (300g)
  • Fish

    • 🐟 120g bonito (sashimi grade)
  • Vegetables

    • 🧅 Chopped green onion, as needed
  • Seaweed

    • 1/2 sheet roasted nori
  • Oil

    • 1 tsp salad oil
  • Seasoning

    • 🍬 1 tsp sugar
    • 2 tbsp miso
    • 1 tsp grated ginger
    • 🌰 1 tbsp ground white sesame
  • Broth

    • 🐟 10g bonito flakes
    • 💧 300ml water

Heat salad oil in a frying pan over medium-high heat. Sear the bonito on all sides until lightly browned. Remove and submerge in ice water, then pat dry. Slice into bite-sized pieces.

Bring water to a boil in a pot, then turn off the heat and add bonito flakes. Once the flakes settle, strain through a sieve to make bonito broth. Reserve 2 tsp of the broth.

In a bowl, mix the reserved bonito broth with sugar, miso, grated ginger, and ground sesame. Add the seared bonito and coat evenly.

Serve cooked rice in bowls, top with the seasoned bonito, chopped green onion, and torn roasted nori. Serve with the remaining bonito broth on the side.
