INGREDIENTS
Rice
- 🍚 1 bowl (200g) cooked rice
Seafood
- 50g sashimi-grade scallops
- 🐟 50g sashimi-grade salmon
- 2 tbsp soy-marinated salmon roe
Vegetables
- 2 shiso leaves, thinly sliced
Seasonings
- 1 tbsp mirin
- 1.5 tbsp soy sauce
- 💧 1 tbsp water
STEPS
Combine mirin, soy sauce, and water in a small pot. Bring to a boil, then let cool.
Cut scallops into quarters and salmon into 1.5cm cubes. Mix the cooled sauce with scallops and salmon in a bowl, cover tightly with plastic wrap, and refrigerate for 15 minutes. Add salmon roe and mix gently.
Slice shiso leaves thinly.
Place cooked rice in a bowl, sprinkle shiso leaves on top, and pile the marinated seafood mixture over the rice.
