INGREDIENTS
Seafood
- 🦪 6 scallops
Protein
- 200g firm tofu
Vegetables
- 🥕 1/4 carrot, julienned
- 1 piece ginger, julienned
- đź§… 1 tbsp chopped green onion
Seasoning
- đź’§ 150cc water
- 1/3 tsp Japanese dashi granules
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp soy sauce
Thickener
- đź’§ 1 tbsp water
- 1 tbsp potato starch
STEPS
Wrap firm tofu in kitchen paper, place on a microwave-safe plate, heat in a 600W microwave for 2 minutes, then cut into bite-sized pieces. Julienne carrot and ginger.
Add the seasoning ingredients (water, dashi, sake, mirin, soy sauce) to a pot and bring to a boil. Add the tofu and bring to a boil again.
Add julienned carrot and ginger, and simmer on medium heat for about 3 minutes. Add scallops and cook for 1–2 minutes until cooked through.
Pour in the potato starch mixture and stir until the sauce thickens. Serve in a bowl and garnish with chopped green onion.
