Preheat the oven to 375°F (190°C) and spray a 9x13-inch baking dish with cooking spray.

Cook ziti pasta in salted boiling water until just tender, drain and reserve 1/2 cup pasta water.

Cook Italian sausage in olive oil over medium heat, breaking up the meat until no longer pink.

Combine sausage with crushed tomatoes (reserve 1/3 cup), garlic, Italian seasoning, red pepper flakes, and spinach. Cook for 10 minutes.

In a bowl, mix ricotta cheese, heavy cream, mozzarella cubes, Parmesan, garlic granules, and salt.

Add sausage mixture and ricotta mixture to pasta, toss well, and thin out with reserved pasta water if needed.

Spread reserved tomatoes in the casserole dish, layer with pasta and mixed cheeses, and repeat for a second layer.

Bake the ziti in the preheated oven until cheese is golden brown and pasta is hot, about 25–30 minutes.
