Satoimo and Wakame Miso Soup

INGREDIENTS

  • Vegetables

    • 3 pieces (100g) satoimo
  • Seaweed

    • 1 tbsp dried wakame
  • Seasoning

    • 1/3 tsp Japanese dashi powder
    • 2 tbsp miso
  • Liquid

    • đź’§ 400 ml water

Peel the satoimo, cut off both ends, and slice into 1 cm thick pieces. Rub with a pinch of salt, rinse with water, and remove the sliminess.

Add satoimo, water, and dashi powder to a pot. Heat over medium heat until boiling, then cover and simmer on low heat for 6 minutes until satoimo softens.

Add wakame and stir. Turn off the heat, dissolve miso into the soup, and heat gently until just before boiling. Remove from heat.
