INGREDIENTS
Fish
- 🐟 3 sardines, filleted
Condiments
- 3 umeboshi, pitted and mashed
Herbs
- 6 shiso leaves
Flour
- 3 tbsp all-purpose flour
Liquid
- 💧 4 tbsp water
Oil
- As needed salad oil for frying
STEPS
Pit the umeboshi and mash the flesh into a paste.
Pat the sardines dry and cut them lengthwise in half.
Spread the ume paste on the sardines, place a shiso leaf on top, and roll them tightly from the head side. Secure with a toothpick and coat with flour.
Prepare a flour-water mixture and dip the rolled sardines into it.
Deep-fry the sardines at 170°C until golden and crispy.
