INGREDIENTS
Fish
- 2 whole sanma (300g)
- đź§‚ 1/4 tsp salt
- 1 tbsp potato starch
- 5 tbsp salad oil
Scallion Sauce
- đź§… 1/2 scallion, minced
- 1 tsp grated ginger
- 🍬 1/2 tbsp sugar
- 1 1/2 tbsp vinegar
- 1 1/2 tbsp soy sauce
- 1/2 tbsp sesame oil
STEPS
Cut off the head and tail of the sanma, remove the innards, and cut into 4 equal pieces. Wash the inside with chopsticks in water and pat dry. Sprinkle salt evenly and coat with potato starch.
Mince the scallion finely.
Mix all the scallion sauce ingredients in a bowl.
Heat salad oil in a frying pan over medium heat. Fry the sanma pieces for 3 minutes on each side until cooked through.
Serve the sanma on a plate and drizzle the scallion sauce over the top.
