    • 2 whole sanma fish
    • 🧂 A pinch of salt and pepper
    • Enough flour for coating
    • 1 tsp salad oil
  • Sauce

    • 🍬 1 tsp sugar
    • 2 tbsp ponzu soy sauce
    • 🧈 10g salted butter
    • 💧 2 tbsp water

Cut off the heads of the sanma fish and divide them into three pieces. Remove the innards, rinse with water, pat dry, and season with salt and pepper. Coat with flour.

Heat salad oil in a frying pan over low heat. Add the sanma and cook until golden brown on one side, then flip and cook through. Plate with green vegetables like lettuce.

In the same pan, add the sauce ingredients (sugar, ponzu soy sauce, butter, and water) and simmer until glossy. Pour the sauce over the sanma.
