INGREDIENTS
Rice
- 🍚 2 cups soaked rice
Fish
- 2 whole sanma (300g)
Mushrooms
- 1 pack maitake (100g)
- 1/2 pack shimeji (100g)
- 3 shiitake mushrooms
Seasoning
- đź§‚ Pinch of salt
- 2 tsp salad oil
- đź§‚ 1/4 tsp salt for sanma
Sauce
- 1 tbsp sake
- 1/2 tbsp soy sauce
- đź§‚ 1/3 tsp salt
- đź’§ 350 ml water
Garnish
- 1/2 bunch mitsuba
- 2 sudachi
STEPS
Prepare the rice by soaking it in water for at least 30 minutes.
Season the sanma with 1/4 tsp salt and grill until lightly browned.
Heat salad oil in a pan and sauté the mushrooms until fragrant.
Combine sake, soy sauce, salt, and water to create the seasoning mixture.
Place the soaked rice, grilled sanma, sautéed mushrooms, and seasoning mixture into a clay pot.
Cook over medium heat until boiling, then reduce to low heat and simmer for 15 minutes.
Turn off the heat and let the rice rest for 10 minutes.
Garnish with chopped mitsuba and sliced sudachi before serving.
